Whole Roasted Sweet Potatoes
Sweet potatoes are a great source of fiber and vitamins, are low in fat, and tasty prepared either savory or sweet. Roasting them whole is the easiest, no-fuss, simplest way to prepare them. A few suggestions for toppings are butter, cinnamon sugar, caramelized onions, shredded cheese, honey, nuts, maple syrup, and sour cream and chives.
INGREDIENTS :
- 4 sweet potatoes
- 1 tablespoon vegetable oil
- 1 teaspoon sea salt
DIRECTION:
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or aluminum foil.
- Scrub potatoes and pat dry with a paper towel. Prick potatoes with a fork or sharp knife about 5 times. Rub potatoes all over with oil and salt which will crisp the skin while baking. Place on the prepared baking sheet.
- Bake in the preheated oven until soft inside, about an hour. Test for doneness by gently squeezing with an oven mitt, or pierce with a knife or fork to see if there’s any resistance. If there is, back into the oven for another 10 to 15 minutes (See Cook’s Note below for a cooking time guide).
- Slice the top of the potato, fluff the inside with a fork, add whatever toppings you like, and serve immediately.
